The days get shorter and cooler and I keep indulging on a nice cup of Chai tea. But Chai is not only great as tea, I recently experimented with a new muffin recipe I found under https://cafedelites.com.
Like all the recipes I share as well this one is easy made and with simple ingredients. And I was surprised by its freshness! The kids enjoyed them, too, and and had a nice school snack!
Go on, what are you waiting for, after all we are heading into the Christmas Season and Chai is always a good way to get into the spirit. Oh, and the smell spreading throughout the kitchen is simply divine!
Chai – Apple Muffins
Ingredients
• 3 vanilla chai tea bags
• 1/3 cup boiling water
• 2 (red) unpeeled apples cored and diced finely
• 1 teaspoon ground cinnamon
• 2 teaspoons vanilla extract
• 1/2 cup white granulated sugar
• 2 large eggs
• 3 tablespoons unsalted butter melted
• 3/4 cup unsweetened apple sauce
• 3 tablespoons honey
• 1 cup whole wheat flour
• 1 1/2 cups all purpose flour
• 1 tablespoon baking powder
• 1/4 teaspoon salt
Instructions
Preheat the oven to 180°C. Prep 2 muffin tins, with muffin papers.
Prepare the Chai flavour by placing the three teabags in the boiling water and set aside until further usage.
In a bowl combine apples, cinnamon, vanilla and sugar, mixing well until apples are coated.
Then add the eggs, butter, apple sauce, honey and brewed tea. Squeeze any excess tea from the tea bag into the cake batter and mix well.
In a separate bowl, mix together flour(s), baking powder and salt until the ingredients are combined.
Mix the dry ingredients in to the wet ingredients.
Spoon the batter (for easy measuring use an ice cube spoon!) into the prepare muffin tins and bake for 30 – 40 minutes or until toothpick inserted into the centre of muffin comes out clean.
Then, light up a candle, play some music and sit back with a chai tea and your chai muffin!
