Blueberry Muffins

Perhaps he got inspired by Tokyo’s blue winter sky, but when I asked my youngest what kind of muffins we should bake he said “something with blue”. So, out we went and got some Blueberries – for delicious tasting Blueberry Muffins. 

And as the oven was heating up our cold, chilly kitchen, after we mixed and blended the batter and filled the muffin cups a divine scent spread through our home and greeted my two oldest when they got back from school. 

Feeling cold, a bit blue or simply in for a tasty muffin? Here we go:

Blueberry Muffins

Ingredients 

1/2 cup (8 tablespoons) butter, at room temperature
1 cup sugar
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups All-Purpose Flour
1/2 cup milk
2 1/2 cups blueberries, fresh preferred
1/4 cup sugar, for topping ( I just brown sugar as I like the different texture and flavour)

Instruction

Preheat the oven to 180 deg C.
Lightly grease a standard 12-cup muffin tin, or line the tin with papers, and grease the papers.

Beat together the butter and sugar until well combined. Then add the eggs one at a time beating well after each addition. Beat in the baking powder, salt, and vanilla.

Gently combine the batter with the flour and milk, add both alternately.

Mash 1/2 cup of the blueberries then add both mashed and whole berries to the batter stirring gently, just to combine and blend in.

Scoop the batter into the prepared muffin pan. I tend to use an ice-cream scoop.

Sprinkle about 1 teaspoon granulated sugar atop each muffin. I used brown sugar for a slightly different topping. 

Bake the muffins for about 25-30 minutes. They should be light-golden brown on top, and a toothpick inserted into the middle of one of the centre muffins comes out clean.

Remove the muffins from the oven and transfer them to a rack to cool after about 5 after about 5 minutes. Then sit back and enjoy the delicious tasting Blueberry Muffins!
