Mini Meatloaves

School started again, and so are my plans to be a bit more organised and structured when it comes to meals. I am not sure how long it will last this time, but I was bored by the dishes I prepared too many times and annoyed by being out food shopping everyday as I never planned ahead.

I used the first week back to school to take some of my cooking books in the search of new, easy yet tasty recipes! And whenever I found one that all five here at home enjoy I will share it with you.

This one goes back to Nigella Express – it is easy, fast and great to be eaten warm or cold – hence as well great of school lunches or picnics – and can be pre-prepared or frozen. Just what I was looking for!

Mini Meatloaves

Ingredients
500gr sausage meat
500gr minced beef
80gr quick cook oats
70gr A1 Steak sauce
2 eggs, beaten
2 teaspoon Worcestershire Sauce
1 teaspoon coarse salt or 1/2 tablesalt

I did not find sausage meat so I replaced it with 500gr minced pork and swapped the Steak Sauce with BBQ Sauce as this is easy to buy here in Japan. But all 5 of us truly enjoyed these mini meat loaves for dinner, so it seemed have to worked!

Directions
Preheat the oven to 200deg.
Combine all ingredients in a bowl, mix well with hands (or fork).
Divide the mixture into 12 balls, shape them into mini meat loaves.
Place them on a lined baking sheet and cook in the oven for about 30min.

Eat hot, cold, sliced in a sandwich or with a salad, pack for a picnic;
add mayonnaise, ketchup, lingonberry sauce or pickles – let your taste buds take the lead!
